1 large head of green cabbage

1 cup quinoa (or rice)

1 lb ground beef (or plant-based substitute)

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, grated

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 can (15 oz) diced tomatoes

1 can (6 oz) tomato paste

1 tablespoon olive oil

1 tablespoon apple cider vinegar

2 cups vegetable broth (or beef broth)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cabbage: Carefully peel the leaves off the head of cabbage. Place the leaves in a large pot of boiling salted water for about 2-3 minutes, until they are pliable. Drain and set aside to cool.

    Cook the Quinoa: Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer and cover. Cook for about 15 minutes until fluffy and the water is absorbed. Set aside.

      Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until softened (about 3-4 minutes). Add the grated carrot, ground beef, smoked paprika, oregano, salt, and pepper. Cook until the meat is browned and fully cooked. Stir in the cooked quinoa and mix thoroughly.

        Make the Sauce: In a separate bowl, mix together the diced tomatoes, tomato paste, apple cider vinegar, and vegetable (or beef) broth. Set aside.

          Assemble the Cabbage Rolls: Preheat your oven to 375°F (190°C). Take a cabbage leaf and place about 2 tablespoons of the filling at the base. Roll it up tightly, tucking in the sides. Repeat with remaining leaves and filling.

            Arrange in Baking Dish: In a large baking dish, spread a layer of the sauce on the bottom. Place the cabbage rolls seam-side down in the dish in a single layer. Pour the remaining sauce over the top.

              Bake: Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and slightly caramelized.

                Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving. Enjoy your flavorful cabbage rolls!
