Ingredients

1 medium head of green cabbage, chopped

1 lb (450g) ground beef or turkey

1 cup uncooked rice (white or brown)

1 large onion, diced

3 cloves garlic, minced

4 cups beef or vegetable broth

1 can (15 oz) crushed tomatoes

1 can (8 oz) tomato sauce

2 tablespoons Worcestershire sauce

2 teaspoons dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, for garnish

Instructions

In a large pot over medium heat, add a splash of olive oil and sauté the diced onion until translucent, about 4-5 minutes.

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the ground beef (or turkey) to the pot, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

Incorporate the chopped cabbage into the pot, stirring to combine with the meat mixture. Cook until the cabbage starts to wilt, about 4-5 minutes.

Add the crushed tomatoes, tomato sauce, Worcestershire sauce, beef broth, and uncooked rice to the pot. Sprinkle in the dried oregano, smoked paprika, salt, and pepper.

Bring the soup to a boil, then reduce heat to low and cover. Let it simmer for 30-35 minutes until the rice is tender and the flavors meld together. Stir occasionally.

Taste and adjust seasoning if needed, adding more salt or pepper as desired.

Serve hot, garnished with freshly chopped parsley.
