1 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon kosher salt

1/2 teaspoon black pepper

For Frying:

Vegetable oil (for frying)

For the Sandwich Assembly:

4 brioche hamburger buns

Lettuce leaves (such as iceberg or romaine)

Tomato slices

Pickles (optional)

Mayonnaise or your favorite sauce

Marinate the Chicken: In a large bowl, mix the buttermilk, hot sauce (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Breading: In a separate shallow bowl, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.

      Heat the Oil: In a deep skillet or Dutch oven, pour in enough vegetable oil to submerge the chicken thighs (about 3 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C).

        Bread the Chicken: Remove one chicken thigh from the marinade, allowing any excess liquid to drip off. Dredge it in the flour mixture, pressing gently to ensure it’s thoroughly coated. Shake off the excess breading and set aside. Repeat with the remaining chicken thighs.

          Fry the Chicken: Carefully place the breaded chicken thighs into the hot oil. Fry in batches to avoid overcrowding. Cook for about 6-8 minutes on each side, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C). Use a slotted spoon to transfer the fried chicken to a plate lined with paper towels to drain excess oil.

            Toast the Buns: In a separate skillet, melt a little butter and toast the brioche buns on medium heat until golden brown.

              Assemble the Sandwich: Spread mayonnaise (or your preferred sauce) on the bottom half of each toasted bun. Add a piece of fried chicken on top. Layer with lettuce, tomato slices, and pickles if desired. Top with the other half of the bun.
