2 cups cooked brown rice

1 lb chicken breast, diced

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded lettuce

½ cup cilantro, chopped

Juice of 1 lime

Salsa (for serving)

Sour cream (for serving)

Shredded cheese (optional, for serving)

Instructions
 

In a large skillet, heat olive oil over medium-high heat.

    Season the diced chicken with cumin, paprika, garlic powder, onion powder, salt, and pepper.

      Add the seasoned chicken to the skillet and cook for about 6-8 minutes, or until fully cooked and golden brown.

        While the chicken cooks, prepare the rice according to package instructions if not already cooked.

          In a microwave-safe bowl, combine the black beans and corn and heat them in the microwave until warmed through.

            Once the chicken is done, remove it from the heat and squeeze the lime juice over it. Toss to combine.

              In individual bowls, layer the brown rice as the base.

                Top each bowl with the cooked chicken, black beans, corn, cherry tomatoes, avocado, and shredded lettuce.

                  Garnish with chopped cilantro.
