Ingredients

1 French baguette, sliced into 1/2-inch rounds

1 cup cherry tomatoes, halved

8 oz fresh burrata cheese

2 tablespoons balsamic glaze

1/4 cup fresh basil leaves, torn

2 tablespoons extra virgin olive oil

1 garlic clove, peeled and halved

Salt and pepper to taste

Instructions

Preheat your oven to 400°F (200°C).

Arrange the baguette slices on a baking sheet and brush one side lightly with olive oil.

Toast the bread in the oven for about 5-7 minutes or until golden and crisp.

While the bread is toasting, in a bowl, combine the halved cherry tomatoes with balsamic glaze, olive oil, salt, and pepper to taste. Mix gently to coat the tomatoes evenly.

Once the bread is toasted, remove it from the oven and rub the garlic clove on the toasted side of each slice for added flavor.

Top each piece of toasted bread with a generous spoonful of the marinated cherry tomato mixture.

Tear the burrata cheese into pieces and place on top of the tomatoes. Allow the creamy cheese to drape over the bruschetta.

Garnish with fresh basil leaves for a burst of freshness.

Drizzle a little more balsamic glaze over the top if desired.
