Ingredients

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup buffalo sauce (mild or spicy based on preference)

1/4 cup ranch dressing (plus extra for dipping)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Wooden skewers, soaked in water for 30 minutes

Instructions

In a medium bowl, whisk together the buffalo sauce, ranch dressing, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

Add the cubed chicken breasts to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the flavors to meld.

Preheat your grill or grill pan over medium-high heat.

Thread marinated chicken cubes onto the soaked skewers, leaving a little space between each piece for even cooking.

Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

Remove the skewers from the grill and let them rest for a few minutes before serving.

Serve with extra ranch dressing on the side for dipping.
