4 large bell peppers (any color)

2 cups cooked shredded chicken

1/2 cup buffalo sauce (adjust to taste)

1/2 cup cream cheese, softened

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup celery, finely chopped

1/4 cup green onions, chopped

Salt and pepper to taste

1 tablespoon olive oil

Optional: blue cheese crumbles for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of each pepper with olive oil and place them upright in a baking dish.

      In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, chopped celery, and green onions. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste.

        Spoon the buffalo chicken mixture into each prepared bell pepper until they are stuffed to the top.

          Sprinkle additional shredded cheddar cheese on top of each stuffed pepper.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

              Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.

                Remove from the oven and let cool slightly before serving. If desired, sprinkle blue cheese crumbles on top for extra flavor.
