4 medium-sized potatoes, diced

2 cups cooked chicken, shredded

1 cup buffalo sauce (adjust for spice level)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/2 cup green onions, chopped (for garnish)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the diced potatoes with olive oil, garlic powder, salt, and pepper. Toss to evenly coat the potatoes.

      Spread the seasoned potatoes on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until they are golden and tender, stirring halfway through for even cooking.

        While the potatoes are roasting, in a separate bowl, mix the shredded chicken with buffalo sauce and softened cream cheese until well combined.

          Once the potatoes are done, remove them from the oven and reduce the temperature to 375°F (190°C).

            In a baking dish, layer the roasted potatoes at the bottom, followed by the buffalo chicken mixture.

              Sprinkle the shredded cheddar cheese evenly over the top.

                Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                  Once out of the oven, let it sit for 5 minutes before serving.

                    Garnish with chopped green onions just before serving for a fresh touch.
