8 oz elbow macaroni

2 cups cooked chicken, shredded

1/2 cup buffalo sauce (adjust to taste)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

3 tbsp unsalted butter

3 tbsp all-purpose flour

2 cups milk (preferably whole)

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/4 cup blue cheese, crumbled (optional)

1/4 cup green onions, chopped for garnish

Cook the Pasta: Begin by boiling a large pot of salted water. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until it becomes a light golden color.

      Add Milk and Seasonings: Gradually whisk in the milk, making sure to eliminate any lumps. Continue to cook while whisking constantly until the mixture thickens, about 5-7 minutes. Stir in garlic powder, onion powder, smoked paprika, and season with salt and pepper.

        Add Cheeses: Reduce the heat to low, and add the sharp cheddar and mozzarella cheeses, stirring until they are fully melted and the sauce is smooth.

          Combine Chicken and Sauce: In a large bowl, combine the cooked macaroni, shredded chicken, and buffalo sauce, mixing well. Pour the cheese sauce over the mixture and stir until everything is evenly coated.
