2 cups cooked chicken, shredded

½ cup buffalo sauce (adjust to taste)

1 cup shredded cheddar cheese

1 cup finely chopped green onions

2 cups coleslaw mix (or shredded cabbage and carrots)

1 package egg roll wrappers (about 12)

1 egg, beaten (for sealing)

Oil for frying (vegetable or canola)

Blue cheese or ranch dressing for dipping

Instructions
 

In a large mixing bowl, combine the shredded chicken and buffalo sauce. Adjust the heat level by adding more or less sauce based on your preference.

    Add the shredded cheddar cheese, chopped green onions, and coleslaw mix to the chicken mixture. Stir until everything is evenly combined.

      Lay an egg roll wrapper on a clean surface with one corner facing you (like a diamond shape). Spoon about 2 tablespoons of the chicken mixture onto the lower third of the wrapper.

        Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper tightly towards the top corner, sealing the edge with a little beaten egg to help it stick. Repeat this process until all the filling is used.

          Heat about 2 inches of oil in a deep skillet or frying pan over medium-high heat until it reaches 350°F (175°C).

            Carefully add a few egg rolls to the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

              Serve the egg rolls hot with blue cheese or ranch dressing for dipping.
