Ingredients
  

4 large sweet bell peppers (red, yellow, or orange)

2 cups cooked shredded chicken (rotisserie chicken works great)

1 (8 oz) package cream cheese, softened

1/2 cup buffalo sauce (adjust to taste)

1 cup shredded cheddar cheese

1/2 cup ranch dressing

1/4 cup chopped green onions (for garnish)

Celery sticks (for serving, optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    Carefully cut the tops off the sweet bell peppers and remove the seeds and membranes. Set aside.

      In a mixing bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, half of the cheddar cheese, and ranch dressing. Mix until well combined.

        Use a spoon to generously fill each bell pepper with the buffalo chicken mixture. Press down gently to pack it in.

          Place the stuffed peppers upright in a baking dish. If they are wobbly, you can trim the bottoms slightly to stabilize them.

            Top each stuffed pepper with the remaining cheddar cheese.

              Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Once done, remove from the oven and let cool slightly. Garnish with chopped green onions before serving.

                  Serve warm with celery sticks if desired, and enjoy your delicious buffalo chicken dip stuffed bell peppers!
