12 large portobello or cremini mushrooms

1 cup cooked chicken, shredded

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 cup buffalo sauce (adjust to taste)

1/2 cup shredded cheddar cheese

1/4 cup blue cheese crumbles (optional)

2 green onions, finely chopped

Salt and pepper to taste

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the mushrooms: Clean the mushrooms with a damp cloth and remove the stems. Gently scoop out some of the inner part of the mushrooms to create space for the filling. Brush the outside with a bit of olive oil and season with salt and pepper.
