Ingredients

1 cup creamy peanut butter

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1 batch of homemade or box brownie mix (prepared according to package instructions)

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil or vegetable oil

Instructions

Prepare the Brownie Base: Preheat your oven to 350°F (175°C) and grease a mini muffin tin. Prepare the brownie mix as instructed on the package. Pour the brownie batter into the mini muffin tin, filling each cavity about two-thirds full. Bake for about 10-12 minutes or until a toothpick inserted comes out with a few moist crumbs. Allow to cool completely in the tin.

Make the Peanut Butter Filling: In a medium bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Mix until smooth and well combined. If the mixture is too crumbly, add a small splash of melted butter to achieve a creamy texture.

Form the Peanut Butter Balls: Once the brownie bites have cooled, use a small cookie scoop or your hands to roll the peanut butter mixture into small balls (about 1/2 inch in diameter). Place a ball on top of each brownie bite and gently press down to adhere.

Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

Dip the Brownie Bites: Once the chocolate is melted, carefully dip each brownie bite (with peanut butter ball) into the chocolate, making sure they are fully coated. Use a fork to lift them out, letting any excess chocolate drip off.

Chill and Set: Place the coated brownie bites back onto the mini muffin tin or a lined baking sheet. Allow the chocolate to set at room temperature or place the bites in the refrigerator for about 30 minutes to speed up the process.

Serve and Enjoy: Once the chocolate has fully hardened, your Buckeye Brownie Bites are ready to serve. Enjoy these delectable treats at parties, gatherings, or as a delicious dessert!
