Ingredients

4 boneless, skinless chicken cutlets

1 cup cherry tomatoes, quartered

1/4 cup fresh basil, chopped

2 cloves garlic, minced

2 tablespoons balsamic vinegar

1/4 cup shredded mozzarella cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Optional: Balsamic glaze for drizzling

Instructions

Prep the Bruschetta Mixture: In a medium bowl, combine the quartered cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and pepper. Mix well and set aside to let the flavors meld.

Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season the chicken cutlets with salt and pepper on both sides. Place the cutlets in the hot skillet and cook for about 3-4 minutes on each side, or until the chicken is cooked through and golden brown.

Top with Cheese and Tomato Mixture: Once the chicken is cooked, remove the skillet from heat. Spoon the bruschetta mixture generously over each chicken cutlet, and then sprinkle the shredded mozzarella cheese on top.

Melt the Cheese (Optional): If desired, put the skillet back on low heat and cover it for a minute or two to allow the cheese to melt slightly.

Serve: Transfer the bruschetta chicken cutlets to plates. Drizzle with balsamic glaze for an extra layer of flavor, if using. Serve warm and enjoy!
