2 pounds Yukon gold potatoes, peeled and cut into chunks

½ cup unsalted butter

½ cup heavy cream

1 garlic clove, minced

Salt and freshly ground black pepper to taste

2 tablespoons fresh chives, finely chopped (for garnish)

Instructions
 

Place the peeled and cut potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.

    Once boiling, reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.

      While the potatoes are cooking, melt the butter in a saucepan over medium heat. Continue cooking the butter for about 5-7 minutes until it starts to turn golden brown, stirring frequently to prevent burning. You'll notice a nutty aroma as the milk solids caramelize. Remove from heat and set aside.

        Drain the cooked potatoes well and return them to the pot. Allow them to steam dry for a minute.
