Ingredients

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups fresh broccoli florets

2 cups vegetable broth

1 cup whole milk

1 ½ cups shredded sharp cheddar cheese

1 teaspoon Dijon mustard

Salt and pepper to taste

1 teaspoon paprika

1 cup all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

½ cup milk (for dumplings)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

Cook Broccoli: Add the fresh broccoli florets to the pot. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes, or until the broccoli is tender.

Blend the Soup: Using an immersion blender, carefully blend the soup until smooth and creamy. If you don't have an immersion blender, you can carefully transfer the soup to a countertop blender in batches and blend until smooth.

Add Creaminess: Return the blended soup to the pot. Stir in the whole milk, shredded cheddar cheese, and Dijon mustard. Season with salt, pepper, and paprika. Allow the soup to gently simmer, stirring occasionally, until the cheese is melted and the soup is heated through.

Prepare Dumplings: In a mixing bowl, whisk together the flour, baking powder, and salt. Stir in the milk until just combined; the dough should be slightly sticky but hold together.

Dumpling Cooking: Once the soup is simmering, drop spoonfuls of the dumpling mixture into the bubbling soup. Cover the pot with a lid and let the dumplings cook for about 10 minutes; they will puff up and cook through.

Serve: Once the dumplings are fluffy and cooked, ladle the soup into bowls, ensuring each serving gets a few dumplings.

Garnish: Sprinkle fresh parsley on top for a pop of color and flavor before serving.
