8 oz (225 g) fusilli or your favorite pasta

2 cups broccoli florets

1 cup shredded sharp cheddar cheese

1 cup milk (whole or low-fat)

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for heat)

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Add the broccoli florets in the last 3 minutes of cooking. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until it turns light golden color (this is called a roux).

      Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue whisking until the mixture thickens (about 4-5 minutes).

        Add Flavorings: Stir in the garlic powder, onion powder, salt, pepper, and red pepper flakes (if using). Bring to a gentle simmer.

          Melt the Cheese: Remove the saucepan from heat, then stir in the shredded cheddar cheese until it’s fully melted. You may return it to low heat if it needs more time.

            Combine: In a large bowl, combine the drained pasta and broccoli with the cheese sauce. Toss until everything is well coated.
