2 cups elbow macaroni

2 cups fresh broccoli florets

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon mustard powder

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 cup breadcrumbs (for topping)

1 tablespoon olive oil

Instructions
 

Begin by cooking the macaroni according to package instructions until al dente. Drain and set aside.

    In a small pot, bring a pot of water to a boil. Add the broccoli florets and blanch for about 2-3 minutes, just until bright green. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain and set aside.

      In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute to create a roux.

        Gradually whisk in the whole milk, ensuring there are no lumps. Continue to whisk for about 5 minutes or until the mixture thickens.

          Stir in the garlic powder, onion powder, mustard powder, and season with salt, pepper, and cayenne if using.

            Lower the heat and add the shredded cheddar cheese and Parmesan cheese, stirring until melted and smooth.

              Fold the cooked macaroni and blanched broccoli into the cheese sauce, ensuring everything is well coated.

                Preheat your oven to 350°F (175°C).

                  Transfer the mac and cheese mixture into a greased baking dish. In a small bowl, combine breadcrumbs with olive oil and sprinkle evenly over the top.

                    Bake for 20-25 minutes, or until the top is golden and crispy.

                      Remove from the oven and let it cool for a few minutes before serving.
