2 cups cooked egg noodles

1 pound boneless, skinless chicken breasts, cubed

3 cups fresh broccoli florets (or frozen, thawed)

1 can (10.5 oz) cream of chicken soup

1 cup shredded cheddar cheese (plus more for topping)

1/2 cup milk

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon paprika (optional)

1/4 teaspoon cayenne pepper (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Chicken: In a skillet over medium heat, add olive oil. Season the cubed chicken with garlic powder, onion powder, salt, and pepper. Cook the chicken until it is no longer pink in the center, about 5-7 minutes. Remove from heat and set aside.

      Blanch Broccoli: If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water. If using frozen, ensure it is thawed and well-drained.

        Combine Ingredients: In a large mixing bowl, combine the cooked egg noodles, cooked chicken, broccoli, cream of chicken soup, milk, and 1 cup of shredded cheddar cheese. Mix until everything is evenly coated. Adjust seasoning with additional salt and pepper as needed.

          Assemble Casserole: Transfer the mixture to a greased 9x13-inch casserole dish. Spread evenly and sprinkle additional cheddar cheese on top. If desired, add a sprinkle of paprika or cayenne for extra flavor.

            Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
