3 tablespoons butter

¼ cup all-purpose flour

4 cups vegetable broth

1 cup non-alcoholic beer (or additional vegetable broth)

2 cups sharp cheddar cheese, shredded

1 cup heavy cream

1 teaspoon Dijon mustard

½ teaspoon smoked paprika

Salt and pepper to taste

In a large pot, melt the butter over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 5 minutes.

    Stir in the flour and cook for an additional 2 minutes, stirring constantly to avoid lumps.

      Gradually pour in the vegetable broth and non-alcoholic beer, whisking continuously to combine.

        Bring the mixture to a gentle boil, then reduce heat to low. Add the broccoli florets and simmer for about 15 minutes until the broccoli is tender.

          Using an immersion blender (or a regular blender in batches), purée the soup until smooth, leaving some small pieces of broccoli for texture if desired.
