Ingredients
  

6 large eggs

1 cup baby spinach, chopped

1 cup cherry tomatoes, halved

½ cup cooked bacon, crumbled (or plant-based bacon for a vegetarian version)

½ cup shredded cheese (cheddar or mozzarella work well)

¼ cup milk

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil or cooking spray for greasing

Instructions
 

Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil or cooking spray.

    In a large mixing bowl, whisk together the eggs and milk until well combined.

      Stir in the chopped spinach, halved cherry tomatoes, crumbled bacon, garlic powder, and half of the shredded cheese. Season with salt and pepper to taste.

        Pour the egg mixture evenly into each muffin cup, filling them about ¾ full.

          Sprinkle the remaining cheese on top of each cup for an extra cheesy finish.

            Bake in the preheated oven for 20-25 minutes, or until the egg is set and the tops are golden.

              Allow the breakfast cups to cool slightly, then carefully remove them from the muffin tin using a spatula.
