1 pound breakfast sausage (bulk or casings removed)

6 large eggs

1 cup milk

2 cups fresh spinach, chopped

1 cup sharp cheddar cheese, shredded

1 cup diced bell peppers (mixed colors)

1/2 cup onion, finely chopped

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for a little heat)

4 cups day-old bread, cubed (preferably sourdough or whole grain)

Fresh herbs for garnish (chives or parsley)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a large skillet over medium heat, cook the breakfast sausage until browned, breaking it into small pieces as it cooks. Drain excess fat if necessary and set aside.

      In the same skillet, add the chopped onion and bell peppers. Sauté for about 5 minutes or until softened, then add in the chopped spinach, cooking just until wilted (about 1-2 minutes).

        In a large bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, paprika, and cayenne pepper until well combined and slightly frothy.

          In the greased baking dish, layer the cubed bread evenly on the bottom, followed by the sausage mixture, and then spoon the egg mixture over the top. Gently press down to ensure everything is soaked in the egg.

            Sprinkle the shredded cheddar cheese over the entire casserole.

              Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the top is golden brown.

                Once baked, allow the casserole to cool for about 10 minutes before slicing.
