4 large bread rolls (sourdough or rustic)

8 large eggs

1 cup spinach, chopped

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar or mozzarella)

1/2 cup cooked bacon or sausage, crumbled (optional)

1/4 cup milk

1 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs (like chives or parsley) for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the bread bowls: Carefully cut the top off each bread roll and scoop out some of the insides to create space for the egg mixture. Reserve the scooped-out bread for later use (like croutons or breadcrumbs).

      In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well blended.

        Stir in the chopped spinach, halved cherry tomatoes, shredded cheese, and crumbled bacon or sausage (if using) until evenly distributed.

          Place the hollowed-out bread rolls upright on a baking sheet. Carefully pour the egg mixture into each bread bowl, filling them about 3/4 full to allow for expansion.

            Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the tops of the bread bowls are golden brown.

              Remove from the oven and let cool for a few minutes. Garnish with fresh herbs before serving.
