4 bone-in pork chops (about 1 inch thick)

8 oz Boursin cheese (herb and garlic flavor)

4 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon olive oil

Salt and pepper to taste

1 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon honey

Fresh parsley, chopped for garnish

Instructions
 

Prepare the Pork Chops: Preheat your oven to 375°F (190°C). Using a sharp knife, create a pocket in each pork chop by cutting horizontally about three-quarters of the way through.

    Make the Filling: In a bowl, combine the Boursin cheese, minced garlic, and thyme. Mix well until smooth.

      Stuff the Pork Chops: Generously stuff each pork chop with the Boursin mixture, ensuring it's evenly distributed. Season the outside of the pork chops with salt and pepper.

        Sear the Pork Chops: In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, place the pork chops in the skillet and sear for about 3-4 minutes on each side until they are golden brown.

          Prepare the Sauce: In the same skillet, reduce the heat to medium. Add the chicken broth, Dijon mustard, and honey, scraping any browned bits off the bottom of the skillet. Bring to a simmer.

            Bake the Chops: Place the seared pork chops back into the skillet. Transfer the skillet to the preheated oven and bake for approximately 20-25 minutes or until the pork chops reach an internal temperature of 145°F (63°C).

              Serve: Remove the skillet from the oven and let the pork chops rest for about 5 minutes. Garnish with fresh parsley before serving. Drizzle with the pan sauce for added flavor.
