1 lb (450g) potato gnocchi

4 oz (115g) Boursin cheese (garlic and herb)

6 oz (170g) bacon, diced

2 cups broccoli florets

1 cup heavy cream

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.

    Sauté the Bacon: In a large skillet, heat olive oil over medium heat. Add the diced bacon and cook until crispy. Remove with a slotted spoon and place on paper towels to drain.

      Sauté Vegetables: In the same skillet, using the bacon drippings, add the chopped onion and cook until translucent (about 3-4 minutes). Add minced garlic and cook for an additional minute until fragrant.

        Add Broccoli: Toss in the broccoli florets and a splash of water. Cover the skillet to steam the broccoli for about 3 minutes until tender but still vibrant green. Season with salt and pepper.

          Make the Sauce: Lower the heat and add the heavy cream, stirring to combine. Slowly add the Boursin cheese, stirring until completely melted and incorporated into the sauce.

            Combine and Toss: Gently fold in the cooked gnocchi and crispy bacon until well coated in the creamy sauce. Cook for another 2-3 minutes to heat through. Adjust seasoning with salt and pepper to taste.

              Serve: Distribute the gnocchi mixture among serving plates. Garnish with chopped fresh parsley for a burst of flavor and color. Enjoy your delicious creation!
