Ingredients

4 salmon fillets

2 ripe peaches, pitted and sliced

1/4 cup brown sugar

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1/4 cup low-sodium soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat your oven to 400°F (200°C).

In a medium bowl, whisk together the brown sugar, Dijon mustard, apple cider vinegar, soy sauce, Worcestershire sauce, smoked paprika, and olive oil until well combined.

Place the salmon fillets in a baking dish, skin side down. Season with salt and pepper.

Pour the marinade over the salmon, ensuring each fillet is generously coated.

Arrange the peach slices around the salmon in the baking dish.

Roast in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and has a glaze from the caramelized marinade.

Remove from the oven and let it rest for a minute before serving.

Garnish with fresh basil leaves before plating.
