Ingredients

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

1/4 cup brown sugar

1/4 cup apple cider vinegar

1/4 cup non-alcoholic bourbon syrup (available in stores or homemade)

2 tablespoons unsalted butter

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Carrots: If using regular carrots, peel and cut them into sticks about the same size as baby carrots for even cooking.

Cook the Carrots: In a large skillet, add the carrots and cover them with water. Bring to a boil and cook for about 5-7 minutes until just tender. Drain and set aside.

Make the Bourbon Glaze: In the same skillet, melt the butter over medium heat. Stir in the brown sugar and allow it to dissolve, about 1 minute.

Add Vinegar and Syrup: Carefully whisk in the apple cider vinegar and non-alcoholic bourbon syrup to the melted sugar mixture, stirring continuously until well combined.

Season the Glaze: Add the garlic powder, thyme leaves, salt, and pepper to the mixture. Continue to cook for another 2-3 minutes until the glaze is slightly thickened.

Combine Carrots and Glaze: Add the cooked carrots to the skillet, tossing them gently to coat in the glaze. Cook for an additional 2-3 minutes to allow the flavors to meld.

Taste and Adjust: Taste the carrots and adjust the seasoning with more salt or pepper if necessary.

Serve: Remove from heat and transfer the glazed carrots to a serving dish. Garnish with freshly chopped parsley.
