Ingredients
  

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup bourbon whiskey

1/4 cup soy sauce

1/4 cup brown sugar

2 tablespoons apple cider vinegar

2 tablespoons vegetable oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon salt

3 green onions, sliced (for garnish)

Cooked rice (for serving)

Instructions
 

In a medium bowl, whisk together the bourbon, soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, red pepper flakes, black pepper, and salt. This will be the marinade and sauce for your chicken.

    Place the chicken pieces in a large resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for later. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour (or up to overnight for more flavor).

      Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, letting the excess marinade drip off. Discard the used marinade that the chicken was in.

        Add the marinated chicken pieces to the skillet, cooking them in batches if necessary to avoid crowding. Sear the chicken for about 5-7 minutes, or until it’s nicely browned on one side.

          Flip the chicken pieces over, and pour the reserved marinade sauce into the skillet. Bring the mixture to a simmer, then reduce the heat to medium-low and cook for an additional 10-15 minutes, or until the chicken is cooked through and the sauce has thickened. Stir occasionally to ensure the chicken is evenly coated with the sauce.

            Once the chicken is cooked and the sauce is glossy and thick, remove it from the heat. Serve the bourbon chicken over a bed of hot cooked rice and drizzle some extra sauce over the top.

              Garnish with sliced green onions before serving.
