1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp paprika

1/2 tsp cayenne pepper (adjust for heat preference)

Salt and pepper to taste

Vegetable oil, for frying

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (or more for extra heat)

1 tsp rice vinegar

1 green onion, finely chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp and buttermilk. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Breading: In a separate bowl, mix together flour, cornstarch, paprika, cayenne pepper, salt, and pepper.

      Heat the Oil: In a large skillet or heavy-bottomed pan, heat about 2 inches of vegetable oil over medium-high heat. The oil is ready when a small drop of batter sizzles upon contact.

        Coat the Shrimp: Remove the shrimp from the buttermilk and let any excess drip off. Dredge each shrimp in the flour mixture, ensuring it's well-coated.

          Fry the Shrimp: Carefully add the shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
