Ingredients

1 cup fresh blueberries

1/2 cup unsalted butter, melted

3/4 cup brown sugar

1 1/2 cups all-purpose flour

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

Zest of 1 lemon

Instructions

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.

In a small mixing bowl, combine the melted butter and brown sugar, stirring until fully mixed. Pour this mixture into the bottom of the prepared cake pan, spreading it evenly.

Scatter the fresh blueberries over the brown sugar mixture in the cake pan. Set aside.

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.

In another bowl, mix together the eggs, vanilla extract, buttermilk, and lemon zest until well blended.

Pour the wet ingredients into the dry ingredients and gently fold them together until just combined; do not over-mix.

Pour the cake batter over the blueberries in the cake pan, spreading it evenly to cover the blueberries completely.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.

Carefully invert the cake onto a serving plate, allowing the blueberries to rest on top. Let it cool slightly before slicing and serving.
