Blueberry Pie Cookies

2 cups all-purpose flour

½ teaspoon baking soda

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup fresh blueberries (or frozen, thawed and drained)

1 tablespoon lemon juice

1 teaspoon lemon zest

¼ teaspoon ground cinnamon

½ cup powdered sugar (for icing)

1-2 tablespoons milk (for icing)

Instructions
 

In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the egg and vanilla extract to the butter mixture, mixing until well combined.

        Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

          Gently fold in the blueberries, lemon juice, lemon zest, and ground cinnamon until evenly distributed.

            Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

              Scoop tablespoon-sized dollops of dough onto the prepared baking sheet, leaving space between each cookie.

                Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

                  Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                    For the icing, mix the powdered sugar with 1 tablespoon of milk (adding more if needed to achieve a drizzling consistency). Drizzle over the cooled cookies.
