Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

      Make the Blueberry Filling:

In a medium saucepan over medium heat, combine the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Cook while stirring gently until the mixture starts to bubble and thicken, about 5-8 minutes. Remove from heat and let it cool.

          Prepare the Cookie Dough:

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes. Add in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

              Combine Dry Ingredients:

In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing the dough.

                  Assemble the Cookies:

Using a cookie scoop or spoon, drop tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Use your thumb or the back of a spoon to make an indentation in the center of each cookie.

                      Fill with Blueberry Mixture:

Spoon about 1 teaspoon of the blueberry filling into the indentation of each cookie.

                          Bake:

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.

                              Make the Glaze:

In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cookies.

                                  Serve:

Enjoy your delicious Blueberry Pie Cookies with a glass of milk or a cup of tea!
