Blueberry Breakfast Quesadilla

Ingredients
  

4 medium-sized flour tortillas

1 cup fresh blueberries

1 cup cream cheese, softened

1 tablespoon honey

1 teaspoon vanilla extract

1 tablespoon butter

1 banana, sliced

½ teaspoon cinnamon

Powdered sugar, for dusting (optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, honey, and vanilla extract. Mix until smooth and creamy.

    Lay out the flour tortillas on a clean surface. Evenly spread the cream cheese mixture onto half of each tortilla.

      On top of the cream cheese, layer fresh blueberries and sliced banana. Sprinkle with cinnamon for added flavor.

        Fold each tortilla in half to create a quesadilla.

          In a large skillet, melt butter over medium heat. Once hot, carefully add the folded quesadillas to the skillet.

            Cook for 3-4 minutes on one side until they are golden brown and crisp. Flip carefully and cook for an additional 3-4 minutes on the other side.

              Once cooked, remove from heat and let them cool slightly before slicing into wedges.

                Serve warm, dusted with powdered sugar if desired, and enjoy with a drizzle of extra honey or a side of yogurt.
