8 slices of crispy bacon

2 medium ripe tomatoes, diced

1 medium onion, finely chopped

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 large leaves of romaine or iceberg lettuce

4 slices of sourdough bread, toasted

Mayonnaise (optional)

Prepare the Bacon Tomato Jam: In a medium saucepan over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside, leaving the rendered fat in the pan.

    Sauté the Aromatics: In the same pan with the bacon fat, add the chopped onion and cook until caramelized, about 5-7 minutes.
