4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Cajun seasoning

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 lemon (zest and juice)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Filling: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

    Add Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and stir in the grated Parmesan, lemon zest, and salt and pepper to taste. Set aside to cool slightly.

      Prepare the Salmon: Preheat the oven to 400°F (200°C). Take the salmon fillets and score the top side gently to create a pocket without cutting all the way through.

        Stuff the Salmon: Divide the spinach-Parmesan mixture evenly and stuff it into the pockets of each salmon fillet.

          Season and Sear: In a bowl, mix together Cajun seasoning, paprika, cayenne pepper, and the remaining olive oil. Rub this mixture generously over the top of the stuffed salmon.

            Sear the Fillets: Heat an oven-safe skillet over medium-high heat. Add the stuffed salmon fillets (skin-side down) and sear them for about 3-4 minutes until the skin is crispy.

              Bake the Salmon: Once seared, carefully flip the fillets over and transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.

                Serve: Remove from the oven and drizzle with fresh lemon juice. Garnish with chopped parsley before serving.
