4 salmon fillets (6 oz each, skinless)

2 cups fresh spinach, chopped

1 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons cream cheese, softened

1 teaspoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil

Lemon wedges, for serving

Preheat your oven to 400°F (200°C).

    In a skillet over medium heat, add 1 tablespoon of olive oil, then sauté the minced garlic until fragrant (about 1 minute).

      Add the chopped spinach to the skillet and cook until wilted (2-3 minutes). Remove from heat.

        In a mixing bowl, combine the wilted spinach, grated Parmesan cheese, and cream cheese. Mix well and season with salt and pepper to taste.

          Prepare the salmon fillets by placing them skin-side down. Using a sharp knife, make a pocket in each fillet by slicing through the center without cutting all the way through.

            Stuff each salmon fillet with the spinach and Parmesan mixture, pressing down gently to secure the filling.

              In a small bowl, mix together the smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.

                Rub the spice mixture generously over the top of each stuffed salmon fillet.
