Ingredients

4 salmon fillets, skin removed

2 cups fresh spinach, chopped

1 cup grated Parmesan cheese

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon cayenne pepper

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

Lemon wedges for serving

Instructions

Preheat your oven to 400°F (200°C).

In a skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant, about 1 minute.

Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.

In a mixing bowl, combine the sautéed spinach, cream cheese, and grated Parmesan. Mix well until smooth. Season with salt and pepper to taste.

Using a sharp knife, carefully cut a pocket in the center of each salmon fillet. Be careful not to cut all the way through.

Stuff each salmon fillet with the spinach and cheese mixture, pressing gently to ensure it fits securely.

In a small bowl, mix together the paprika, cayenne pepper, onion powder, garlic powder, salt, and pepper. Rub this spice mix all over the outside of the salmon fillets.

Place the stuffed salmon fillets on a lightly greased baking sheet.

Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

Once done, remove from the oven and let rest for a couple of minutes.
