4 salmon fillets (about 6 oz each)

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup sour cream

2 cloves garlic, minced

1 teaspoon lemon zest

1 tablespoon olive oil

1 tablespoon Cajun seasoning

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Filling: In a medium bowl, combine the chopped spinach, cream cheese, grated Parmesan, sour cream, minced garlic, lemon zest, salt, and pepper. Mix until everything is well combined and creamy. Set aside.

    Prep the Salmon: Pat the salmon fillets dry with a paper towel. Make a deep cut in the side of each fillet to create a pocket for the filling.

      Season the Salmon: Rub the outside of each salmon fillet with olive oil and generously coat with Cajun seasoning for that blackened flavor. Ensure all sides are evenly seasoned.
