1 cup graham cracker crumbs

2 tablespoons sugar

1/2 cup unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup sour cream

1 teaspoon vanilla extract

2 large eggs

1 cup fresh blackberries

1 tablespoon culinary lavender, finely chopped

For the Topping:

1 cup fresh blackberries

1 tablespoon honey

1 teaspoon lemon juice

Edible lavender flowers for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Make the Crust: In a mixing bowl, combine the graham cracker crumbs and sugar. Add the melted butter and stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of 12 muffin cups lined with paper liners to create a solid crust. Bake for 8 minutes, then remove from the oven and allow to cool.

      Prepare the Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the sugar, sour cream, and vanilla extract, mixing until well combined.

        Add Eggs and Blackberry-Lavender Mix: Add the eggs one at a time, mixing well after each addition. Gently fold in the blackberries and culinary lavender, being careful not to crush the berries too much.

          Fill the Cups: Divide the cheesecake filling evenly among the cooled crusts, filling each cup to about three-quarters full.

            Bake the Cheesecakes: Bake in the preheated oven for 18-20 minutes, or until the edges are set and the center has a slight jiggle. Remove from the oven and let them cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

              Prepare the Topping: In a small bowl, combine the fresh blackberries, honey, and lemon juice. Gently toss to coat.
