4 slices of sourdough bread

4 oz brie cheese, sliced

1 cup fresh blackberries

2 tablespoons balsamic vinegar

1 tablespoon honey

2 tablespoons unsalted butter, softened

Fresh thyme leaves (optional, for garnish)

Salt and pepper to taste

Instructions
 

In a small saucepan, combine the fresh blackberries, balsamic vinegar, and honey over medium heat. Cook for about 5-7 minutes, stirring gently until the blackberries begin to soften and the mixture thickens slightly. Remove from heat and let cool slightly.

    Spread butter on one side of each slice of bread.

      On the unbuttered side of two slices, layer the sliced brie cheese evenly.

        Spoon the blackberry balsamic mixture over the brie, ensuring an even coverage. Season lightly with salt and pepper.

          Top with the remaining slices of bread, butter side facing out, to form two sandwiches.

            Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes per side, pressing down gently with a spatula until the bread is golden brown and the brie is melted.

              Once cooked, remove from the skillet and let cool for a minute. Slice the sandwiches in half diagonally.

                If desired, sprinkle fresh thyme leaves on top for a pop of flavor and garnish.
