Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly cracked

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 green onions, chopped (for garnish)

1 teaspoon sesame oil (optional)

Salt to taste

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces, black pepper, soy sauce, oyster sauce, and cornstarch. Mix well and let it marinate for at least 30 minutes to an hour in the refrigerator. This helps the chicken absorb all the flavors.

Prepare the Vegetables: While the chicken is marinating, slice the bell peppers and onion, and mince the garlic and ginger.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Make sure the oil is hot before adding the chicken.

Cook the Chicken: Add the marinated chicken to the pan, spreading it out evenly. Let it sear for about 5-7 minutes without stirring to achieve a nice golden crust. Stir and cook for an additional 3-5 minutes until the chicken is cooked through and no longer pink.

Add Aromatics: Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

Add Vegetables: Toss in the sliced bell peppers and onion. Stir-fry everything together for about 3-4 minutes until the vegetables are slightly tender but still crisp.

Finish and Garnish: Drizzle with sesame oil if using, and check for seasoning. Adjust with salt if needed. Remove from heat and sprinkle with chopped green onions.

Serve: Plate the Spicy Black Pepper Chicken hot over steamed rice or noodles, and enjoy the flavors!
