1 ½ cups Biscoff cookies, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

½ cup Biscoff cookie butter

2 large eggs

1 teaspoon vanilla extract

¼ cup sour cream

For the topping:

¼ cup Biscoff cookie butter (melted)

Crushed Biscoff cookies (for garnish)

Prepare the crust:

    In a mixing bowl, combine crushed Biscoff cookies, melted butter, and sugar until the mixture resembles wet sand. Press the mixture firmly into the bottom of a lined 9x9 inch baking pan using a flat object for an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from oven and let it cool slightly.

      Make the cheesecake filling:

        In another large bowl, beat the softened cream cheese until smooth. Add granulated sugar and mix until well combined. Then, mix in Biscoff cookie butter, followed by the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in vanilla extract and sour cream until smooth and creamy.

          Combine and bake:

            Pour the cheesecake mixture over the cooled cookie crust in the baking pan, spreading it evenly.
