2 cups cooked birria meat (beef or lamb), shredded

1 cup birria broth

1 bag of tortilla corn chips

1 cup shredded Oaxaca cheese (or mozzarella)

1 cup diced tomatoes

1/2 cup diced red onion

1 jalapeño, sliced

1/2 cup chopped fresh cilantro

1 avocado, diced

1 lime, cut into wedges

Salt and freshly ground black pepper to taste

Optional: sour cream or crema for drizzling

Prepare the Birria Sauce: If you have leftover birria broth, heat it gently in a saucepan over medium heat. If you need to make some, simmer the beef or lamb bones (or additional meat, if desired) in water along with garlic, bay leaves, cumin, and chili powder until fragrant, and then strain.

    Layer the Nachos: Preheat your oven to 375°F (190°C). On a large baking sheet, spread the tortilla chips evenly in a single layer. Drizzle a few tablespoons of the warm birria broth over the chips.

      Add the Meat and Cheese: Evenly scatter the shredded birria meat over the tortilla chips. Follow up with a generous sprinkling of Oaxaca cheese. Make sure the meat and cheese cover as many chips as possible.

        Bake: Place the nachos in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.

          Garnish and Assemble: Once baked, remove the nachos from the oven. Immediately top with diced tomatoes, red onion, jalapeño slices, and diced avocado.

            Add Freshness: Sprinkle the chopped cilantro over the top and season with salt and pepper to taste.
