3 cups cooked jasmine rice (preferably cold)

4 slices of thick-cut bacon, chopped

2 large eggs

1 cup frozen peas and carrots mix

3 green onions, sliced (whites and greens separated)

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

Optional: Sriracha for a spicy kick

Prep the Ingredients: Make sure your rice is cold to avoid clumping. Chop the bacon, slice the green onions, and measure out your frozen veggies.

    Cook the Bacon: In a large skillet or wok, cook the chopped bacon over medium heat until it's crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon bits to a paper towel-lined plate, leaving the rendered fat in the pan.
