2 cups strong brewed coffee, cooled

3 large eggs, separated

1/2 cup granulated sugar

1 cup mascarpone cheese

1 teaspoon vanilla extract

1 pack of ladyfinger cookies

2 tablespoons unsweetened cocoa powder

1/4 cup dark chocolate shavings (for garnish)

Pinch of salt

Instructions
 

In a mixing bowl, beat the egg yolks and granulated sugar together until pale and creamy, about 3-4 minutes.

    Add the mascarpone cheese and vanilla extract to the egg mixture, blending gently until smooth and well incorporated.

      In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form. Gently fold the whipped egg whites into the mascarpone mixture in three additions, being careful not to deflate the whites.

        Quickly dip each ladyfinger into the cooled coffee, ensuring they are soaked but not soggy (around 2-3 seconds per side).

          In an 8x8 inch square dish, create a layer of soaked ladyfingers at the bottom.

            Spread half of the mascarpone cream mixture evenly over the ladyfingers.

              Repeat the process with another layer of soaked ladyfingers followed by the remaining mascarpone mixture on top.

                Smooth the top with a spatula and refrigerate for at least 4 hours, preferably overnight to set and develop flavors.

                  Just before serving, dust the top with cocoa powder and sprinkle dark chocolate shavings to garnish.
