1 lb smoked sausage, sliced

4 medium-sized potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon paprika

2 teaspoons dried oregano

1 teaspoon dried thyme

4 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Start by peeling and dicing the potatoes into small cubes. Rinse them under cold water to remove excess starch, then pat dry with a paper towel.

    Pre-cook the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and parboil for about 5-7 minutes until slightly tender but still firm. Drain and set aside.

      Sauté the Vegetables: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the chopped onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and red bell pepper, cooking for another 2 minutes.
