Ingredients

1 ½ cups pistachio nuts, shelled and unsalted

¼ cup granulated sugar (for crust)

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup sour cream

¾ cup granulated sugar (for filling)

3 large eggs

Zest of 1 lemon

Zest of 1 lime

⅓ cup fresh lemon juice

⅓ cup fresh lime juice

1 cup cherry preserves

½ cup chopped fresh cherries (optional for topping)

Instructions

Prepare the Crust: Preheat your oven to 350°F (175°C). In a food processor, pulse together the pistachio nuts and ¼ cup sugar until finely ground. Add the melted butter and pulse until well combined.

Form the Crust: Press the pistachio mixture into the bottom of a 9-inch springform pan, creating an even layer. Bake for about 10 minutes or until lightly golden. Remove from the oven and allow to cool.

Make the Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the ¾ cup of sugar and mix until well combined.

Incorporate Eggs: Add the eggs one at a time, mixing after each addition until just combined.

Add Flavors: Stir in the lemon zest, lime zest, lemon juice, and lime juice until the mixture is creamy and cohesive.

Bake the Cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 45-50 minutes or until the edges are set but the center is still slightly jiggly.

Cool: Turn off the oven and crack the door open, letting the cheesecake cool inside for an hour to prevent cracking.

Chill: Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.

Top with Cherry Preserves: After chilling, spread the cherry preserves evenly on top of the cheesecake.

Garnish: If desired, scatter chopped fresh cherries over the cherry layer for added flair.

Serve: Remove the cheesecake from the springform pan and slice into wedges.

Prep Time: 30 minutes | Total Time: 6 hours (includes cooling and chilling) | Servings: 10 slices

                          - Presentation Tips: Serve each slice on a dessert plate with a sprig of mint on top for a pop of color and freshness. Enjoy your delightful and creamy dessert!
