Ingredients
  

2 cups cooked chicken, shredded

1 cup grated pepper jack cheese

1 cup grated cheddar cheese

1 small red onion, thinly sliced

1 jalapeño pepper, finely chopped (seeds removed for less heat)

½ cup fresh cilantro, chopped

2 tablespoons chipotle in adobo sauce, minced

4 large flour tortillas

2 tablespoons olive oil

Salt and pepper to taste

Sour cream and salsa for serving

Instructions
 

In a mixing bowl, combine the shredded chicken, pepper jack cheese, cheddar cheese, sliced red onion, jalapeño, cilantro, and chipotle in adobo sauce. Mix well and season with salt and pepper to taste.

    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Place one tortilla in the skillet, and spread a generous portion of the chicken mixture over half of the tortilla.

      Fold the tortilla in half to cover the filling, and cook for about 3-4 minutes on one side until it’s golden brown and crispy. Carefully flip and cook for an additional 3-4 minutes on the other side.

        Remove the quesadilla from the skillet and place it on a cutting board. Allow it to cool for a minute, then cut into wedges.

          Repeat the process with the remaining tortillas and filling mixture, adding more olive oil to the skillet as needed.

            Serve warm with sour cream and salsa on the side for dipping. Enjoy!
