6 slices of thick bread (preferably brioche or challah), cut into small cubes

4 large eggs

1 cup milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup maple syrup (for serving)

Optional toppings: fresh berries, powdered sugar, whipped cream

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter to prevent sticking.

    In a large mixing bowl, combine the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt. Whisk until well blended.

      Add the bread cubes to the egg mixture and let them soak for about 5 minutes, allowing the bread to absorb the liquid.

        Gently fold the mixture to ensure all the bread cubes are coated evenly.

          Using a spoon, fill each muffin cup about 3/4 full with the French toast mixture.

            Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.

              Once baked, remove the muffin tin from the oven and allow to cool for a few minutes before gently running a butter knife around the edges to help release the muffin cups.

                Carefully remove the muffins and place them on a serving platter.

                  Drizzle with warm maple syrup, and add your choice of fresh berries, powdered sugar, or whipped cream for extra flavor.
