¼ teaspoon salt

½ cup unsalted butter, at room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 ripe banana, mashed (about ½ cup)

½ cup buttermilk

1 cup vanilla pudding mix (instant)

1 cup whipped cream (or whipped topping)

Additional banana slices and Nilla wafers for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

    Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar together until light and fluffy. This should take about 3-4 minutes.

        Add Eggs and Banana: Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract and the mashed banana until well combined.

          Combine Ingredients: Starting and ending with the dry ingredients, alternate adding the flour mixture and the buttermilk to the wet ingredients. Mix until just combined; do not overmix.

            Fill Cupcake Liners: Divide the batter evenly among the lined cupcake cups, filling each about ¾ full.

              Bake: Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

                Prepare the Frosting: In a medium bowl, prepare the vanilla pudding mix according to package instructions and let it set for about 5 minutes. Gently fold in the whipped cream.
